Lacking a decent pudding/dessert to offer Oliver and his friend after tea last night, I had a mind to rustle up a batch of Hummingbird vanilla cupcakes with jet black icing, topped with little gold balls. Oh yes, it all looked so lovely in my mind's eye.
This is not how it was supposed to happen. In fact, their physical appearance belies their appalling texture. Oliver's friend kindly described them as 'alright, but a bit spongy.' He wasn't kidding. These could give Spontex a run for their money.
Thankfully we were spared the throat burning smell of freshly laid tarmac, but in every other respect the icing very closely resembled a road surface. You could not separate the cake from the wrapper, so tightly the glue-like interior clung to the cheap folds. Kim - even these cannot be rescued by consuming with a cup of tea. A cup of Rennies, maybe.
I apologised to the boys and threw them away. I expect that it will take several days before the one they did manage to eat can clear their digestive system anyway.
I know where I went wrong. I am too ashamed to tell you about it, but suffice to say, it involved a lack of patience and corner-cutting. Tut tut. I imagined myself knocking these out in a round of the Great British Bake Off, and felt quite faint at the awful prospect.

Meh.
If we lived in the days of Pioneers, my family would surely be the one to starve to death.
So sorry your cupcakes didn't turn out as you wanted. I use that Hummingbird recipe a lot so am intrigued to know what went wrong. Can't see the texture in your pic so don't know whether mine are different or I just like eating spontex! Black icing can be tricky and of course heaven knows what they put in it to make the black colour. Your flapjack and chocolate cake look yummy - I'd happily scoff both! I don't like cakes that look too perfect - puts me off eating them. I bet you are being way too hard on yourself and that these were both delicious! I know I've said so before but you do write very wittily, Janice. E x
ReplyDeletemy butter was not at room temperature. I couldn't be faffed to wait, or get it to room temperature, so I chucked it in and got on with it. The mixture then went into tiny lumps which I decided to remedy by beating into submission with an electric whisk. Need I go on?! Overworked is not the word.

Oh dear Janice, sorry this did make me laugh purely because I can relate to these disasters so easily. The chocolate cake would still be eaten in our house as would the flapjack :) x
DeleteThis did make me laugh - I'm constantly depressed by the photographs of perfect, delicious looking baking all over the blogs, and here are you being honest and funny about your less-than-perfect offerings... I sheer away from anything more complicated than biscuits, scones and sponge-cake these days, as I know I can make them successfully... Anything to do with humming birds and ganaches - Pah! AnnaC
